What is Meyhane Reis?

Meyhane rice is a dish that is loved and prepared in every region of Turkey without exception. It can be consumed both as a starter, snack and as a main course. It is a very popular and widely used dish in Turkey, especially since it is served in some tavernas. Meyhane rice, also known as bulgur rice with meat in many regions, is also known as tavern rice with eggplant in some regions.
 
Although the exact origin is unknown, the tavern rice, which is believed to belong to the Gaziantep region, is widely consumed in all regions. Meyhane rice is a side dish that is usually prepared and served on the table in addition to the main dishes. It is a type of wheat rice that is healthy and easy to digest than normal rice. Wheat rice, which is prepared by adding minced beef or beef cubes to the classic wheat rice known to us, is loved and consumed in many regions.
 
As with every recipe, there are also differences in the recipe for tavern rice from region to region, from city to city. Meyhane rice, which is basically a rice with meat, is also made from eggplant or chickpeas in some regions.
 
We can say that tavern rice is basically the fortified version of the classic wheat rice with the material ratio and additional ingredients. Meyhane rice, which is mainly made with tomato paste, onion and pepper flavors, can be eaten as a main course or as a starter.
 

Meyhane rice recipe

Required Ingredients:
 

  • 2 spoons of butter
  • 2 tablespoons of olive oil
  • 2 cups of bulgur wheat
  • 3 green peppers
  • 2 red peppers
  • 2 cloves of garlic
  • 8 cherry tomatoes
  • 2 tablespoons of tomato paste
  • 1 onion
  • 1 teaspoon of salt
  • 1 teaspoon black pepper
  • 3 cups of hot water
 

How do you make meyhane rice in a pan?

 
  • First, let's start by adding our oil to the heated pan.
  • Then we leave the onions, which we cut in normal cooking sizes, in the heated oil and wait for it to change color.
  • After our onions have changed color, we add the peppers, which we cut into rings, to our onions. It should be noted here that the seeds of the peppers should be removed.
  • After the peppers are fried, we put tomato paste, salt, pepper and garlic on them and turn them for a few minutes without stopping.
  • After all the ingredients are sufficiently roasted, add the peeled tomatoes and set them over low heat.
  • Then add the wheat that we washed and drained beforehand and stir for another 3 minutes.
  • Finally we add hot water and close the lid of our saucepan and wait about 15 minutes for all the water to draw up, then we turn off the stove and wait half an hour for it to brew.
 

Which dishes is Meyhane rice eaten with?

 
Meyhane rice is generally preferred alongside alcoholic dishes. Another alternative are meat dishes. In addition, as we mentioned in our article, tavern rice can even be consumed as a main course.
